Recirculate wort

a. Drain the wort from Mash Tun into pitcher until pitcher is approximately ¾ full (see NOTE 9).

b. Gently pout the wort back into mash tun (see NOTE 11).

c. Repeat steps 'a' & 'b' until the wort flowing through the drain tube appears hazy, but not cloudy (see NOTE 12).

Lauter the wort

a. When the draining wort runs clear carefully drain wort into Large Brew Pot. Start by only partially opening the value. After enough wort has flowed into the brew pot and covered the drain hose, then the value can gradually be opened further (see NOTES 8, 10,11).

b. Close valve when all wort has been drained from mash tun.

Sparge

a. Pour 3.5 gallons of 170 F water into the Mash Tun (see NOTE 9).

b. Stir the contents of the Mash Tun thoroughly.

c. Cover and let the mixture rest for 15 minutes.

d. Recirculate and drain into Large Brew Pot (see step 1 – Recirculate).
